Cut sirloin into 1 inch cubes. Sprinkle with salt and pepper.
Melt butter in frying pan and brown meat over low heat about
20 minutes, stirring often.

Add onion, water, and salt. Cover; simmer gently for 1 hour.
Test with a fork for tenderness, when meat is done remove to
warm bowl while preparing gravy from the beef stock.

Skim fat from the top of the stock. Add salt to taste as well as
Kitchen Bouquet and Tabasco. To thicken, mix together the
cornstarch and water and add to stock. Stir constantly for a
smooth gravy.

Return meat to gravy and simmer gently for 10 minutes. Add
salt, pepper, and tabasco to taste. Meat should be quite
tender. Serve over noodles or rice.
