Put chicken, pineapple, and red bell pepper in crockpot. Mix
oil, soy sauce, 1/2 cup pineapple juice, ketchup, brown sugar,
ginger and pepper. Pour sauce ingredients over chicken.
Cook on high for 2-3 hours
When cooking is done, mix cornstarch with remaining
pineapple juice and incorporate into the sauce. Continue to
cook on high till the sauce is thickened, about 15 minutes.
Serve over rice.
