Wash and dry then slice lengthwise eggplant.
Pre-heat oven to 400 degrees.
Lay on greased cookie sheet.
Brush eggplant with olive oil,
Sprinkle with salt and ground black pepper,
Roast at 400 degrees until tender and browned.
Sprinkle with Parmesan and return to oven until Parmesan is
melted
