Fill a small saucepan half full with about 4 cups
water. Stir in 1 teaspoon kosher salt, place over
high heat. When the water boils add the couscous,
cook, stirring occasionally until tender but not
mushy. About 8 - 10 minutes. Drain
While couscous boils, heat a small skillet over
medium heat (or use dirty skillet from braising
chicken, chops etc.) Add butter and onion whites,
cook, stirring, until fragrant 1 minute. Add
couscous, stir and cook 1 additional minute.
Top with onion greens, serve quickly.
