1- 4.3 oz. pkg of Rice-A-Roni Long Grain & Wild Rice mix
2 c. water
2 tbsp. olive oil
1 c. chopped celery
1 c. diced carrots
1 c. diced mushrooms
3/4 (6 tbsp.) stick of butter
3/4 c. flour
2 c. half and half
Instructions
In a skillet, cook chicken cubes.
In a dutch pot heat oil. Saute celery, carrots,
and mushrooms until slightly tender. Add broth,
chicken, water, and rice without seasoning. Bring
to a boil, then reduce to simmer until rice is
tender, about 20 minutes.
In a bowl, whisk flour in half and half. In a
saucepan over medium heat, melt butter and stir in
seasoning packet.
Fold cream mixture and seasoning mixture into
dutch pot. Stir and simmer until soup starts to
thicken.

Very good! A lot like Copps chicken rice soup.
