2lb mushrooms, cleaned
|

4c cauliflower, cut into small florets
|

2c cherry tomatoes
|

12 cloves garlic peeled and left whole
|

4Tb olive oil
|

1.5Tb Italian seasoning

Salt

Pepper
|
|
2Tb fresh parsley, chopped

Instructions |
|
|
Preheat oven to 400 degrees.
In a Ziploc bag, add all veggies. Drizzle with
olive oil, Italian seasoning, salt and pepper to
taste. Combine well.

Dump veggies onto a baking sheet. Roast for 30
minutes. Garnish with parsley and serve.
