4 spicy Italian sausage links, casings removed and crumbled
1 large onion, sliced thinly
1 red bell pepper, sliced thinly
1 orange bell pepper, sliced thinly
1 yellow bell pepper, sliced thinly
1.5ts salt
1/2ts cracked black pepper
1.5ts Italian seasoning
4 cloves of garlic, minced
1/2c Chardonnay white wine
28 oz can of diced tomatoes with juice
Maggi, soy sauce or Unami seasoning, to taste
8oz Pappardelle noodles
2Tb fresh parsley, chopped
1/4c fresh basil leaves, julienned
Parmesan cheese
Instructions
Heat a pot of salted water.
In the meantime, heat a large skillet over medium
high heat. Add 2Tb of oil. When oil is hot, add
big crumbles of sausage. Brown and cook
thoroughly. Remove sausage with slotted spoon
and place in a bowl. Set aside.
Add onions into pan with sausage drippings. Add
more oil if necessary. Allow to caramelize,
stirring consistently. Then, add all bell peppers
and saute for 2 minutes until slightly tender. Add
salt, pepper and Italian seasoning.
Add garlic until fragrant. Then add white wine
and let it reduce until completely cooked off.
Add diced tomatoes in juice and cooked sausage.
Let simmer. Then add soy sauce, Maggi or Unami
flavoring to taste. Turn off heat.
Cook noodles according to instructions. Drain and
add noodles to sauce. Gently toss and adjust
seasoning. Serve, garnish with parsley and basil
and some Parmesan.
