Heat oil and garlic in skillet. Stir in sausage slices and cook until browned, stirring frequently.
Add red pepper, onion, broccoli, broth and tomato sauce and simmer for ten minutes, or until the vegetables are tender and the liquid is absorbed.
Prepare rice according to package instructions. Stir rice into the skillet, then sprinkle with mozzarella. I cover the skillet for a couple minutes so that the cheese melts.
Then serve. Quick and delicious.
