I doubled sauce recipe if making it with
capelinni because it soaks in. Sauce is
DELICIOUS....
In a large skillet heat olive oil. When the oil
begins to shimmer, add the garlic. Cook until
softened.Add the shrimp. season with salt and
pepper. Toss until the shrimp is pink and opaque
in the center, 2-3 minutes. Add the vodka, toss 1
minute. Add the marscapone and stir until the
sauce is smooth. Turn off the heat and stir in
the parsley, basil and lemon juice. Divide the
shrimp among shallow bowls and drizzle with more
lemon juice and serve with crusty bread.
