1 pound fresh or thawed large shrimp, peeled and deveined
2 medium sweet peppers, cut into bite size pieces
2 green onions, sliced into 1/2 inch pieces
1 14.8 oz pouch cooked, long-grain rice
1 Tbl snipped fresh cilantro (optional)
Instructions
In a large bowl combine the teriyaki sauce,
pineapple juice, sesame oil, and fresh ginger.
Add shrimp, peppers, and green onions; toss to
coat.
For each packet, fold a 36x18 in piece of heavy
foil in half to make an 18 inch square. Repeat to
make 4 total squares. Divide rice among the
centers of each square. Top with shrimp mixture
equally divided between each square.
Bring up opposite edges of foil and seal with a
double fold. Fold remaining edges together to
completely enclose, leaving room for steam to
build.
For a gas or charcoal grill, place packets on a
grill rack directly over medium heat. Cover
and grill for 8 - 10 minutes or until shrimp is
opaque and peppers are crisp tender, turning
packets once halfway through grilling. Open
packets carefully. If desired, top with
cilantro (each serving is 316 calories, 29
grams of protein)
