Preheat oven to 350 degrees. Combine egg and 1-4 cup of the milk. Mix cracker crumbs, salt, and dash pepper. Dip chicken pieces into egg mixture, then roll in crumbs. In heavy skillet cast iron pan, brown chicken in hot shortening turning with tongs.
Add remaining cup milk. Cover tightly and put in over for about 20 minutes. Once cooked remove chicken to platter. Make Cream Gravy (see below)
In a screw top jar, shake half of the milk with flour, salt, and pepper. Stir that into drippings in pan. Add remaining milk. Cook, stirring constantly, until thick and bubbly. Cook 2 to 3 minutes more.
