325. Parchment. Mix Coconut, milk and vanilla. Set aside
Beat egg whites and salt til stiff peaks. Fold egg into coconut mix.
Mound using mini ice cream scoop, one inch apart. Bake 18-20
min until edges are golden WATCH. Cool a few minutes then transfer to
rack to cool completely. Melt chocolate in microwave for 30
seconds or a double boiler. Dip bottoms ln chocolate and return to
cookie sheets (chocolate side up). Chill 10 min to set chocolate. Keep in airtight
container up to a week.
