Boil water, salt and 1 T butter. Take off heat stir quickly with mashed
potatoes, add egg quickly, then all cheese. Set aside.
To oil and water add salt and soda then add flour, one cup at a time until
soft consistency. (mix master works fine). Limit handling.
Separate into 3 balls and roll out kind of thin. Used 2 3/8 inch circle (glass) for
appetizer size.
Fill each and form triangle. Dough stretches. Egg wash with grated
parmesan. Bake 350 30-40 min. We doubled the recipe and
made about 6 dozen plus 2 dozen rollies. Can freeze baked or not.
