Stir in all vegetables, chicken, chicken stock, salt, pepper, garlic and thyme. Boil with lid on for about 20 minutes. In a separate bowl, mix 1 cup milk with 4 Tbs of cornstarch. Whisk until smooth. Stir into chicken mixture until it boils. Pour mixture into 2 un-greased 2 - 3 qt casserole dishes.
