     Passover Friendly Passover Banana Cake

Ingredients
7 large eggs (yolks and whites separated)
1 cup granulated white sugar
1 cup mashed ripe bananas (2-3 ripe bananas)
1/4 cup potato starch
3/4 cup cake meal
1 teaspoon pure vanilla extract
3/4 teaspoon salt
 

Instructions
Gather the ingredients Preheat oven to 325degrees Grease and flour a bundt pan, tapping out excess flour In a large bowl beat egg yolks and sugar on medium speed until light and fluffy about 3 minutes. Add bananas, potato starch cake meal vanilla extract and salt. Beat until thoroughly blended. IN a separate chilled bowl beat egg whites until stiff.
Add to the batter gently folding in until combined. Do not beat. Pour into pan Bake in preheated oven for 1 hour After baking cool upside down for 30 minutes. Allow to cool to room temperature.
