In large pan, heat oil over low heat with
shallots. Cook stirring until softened 2 min. Add
potatoes , salt and pepper, cook, stirring until
golden about 2 minutes. Add broth and cover,
bring to boil and then reduce to low. Cook until
potatoes are tender about 15 min. Add peas and
cook 2 min. Cool slightly. In blender puree until
smooth. Strain and return to pot. Over low heat
stir in 1/2 C cream. Garnish with cream and
bacon.
