Sandwiches
1. Lightly brush mustard on one side of each
slice of toast
2. Stack your Gruyere and ham sliced and trim
edges. Cut both into equal-sized squares to fit
your toasts. If your slices are thin then don't
hesitate to double up the sandwiches.
3. Build your Croque monsieur sandwiches' slice
of bread (mustard side up, a slice of ham, a
slice of Gruyere cheese and a slice of bread
(mustard side down).
4. Place your sandwiches on a parchment covered
half sheet pan and set aside.

Sauce
1. In a small saucepan heat your milk on medium
heat for 3-5. You want to simmer the milk with
small bubbled forming on the edges, do not
boil. Turn off and set aside.
2. In another small saucepan melt your butter
over medium heat.
3. Add your flour and whisk together for 1 to 2
minutes. Keep whisking to combine flour while
taking care not to brown your roux.
4. Slowly add your milk while still whisking
and continue 3-5 minutes until the sauce
thickens a bit.
5. Remove from the heat and add your Parmesan
cheese, salt, and pepper.
6. Spoon the tops of your Croque monsieur
sandwiches with the cheese sauce.
