2 Cups (16 oz) bay scallops, cleaned (we used sea scallops)
Instructions
In a small bowl combine breadcrumbs, butter, a pinch of salt and parmesan. In another small bowl combine thyme, garlic, lemon zest, a pinch of black pepper and the cream.
Put scallops in 8 X 8 baking dish. Pour cream mixture over the scallops, then sprinkle with breadcrumbs. (At this point the scallops can be wrapped and refrigerated for 24 hours, or served immediately).
Bake at 400 deg. for 15 minutes until bubbly and breadcrumbs are browned.
NOTE- You can lightly spray the breadcrumbs with Pam to help them to brown.
