Put a glug of cooking oil in a large skillet and
heat to med hi. Add onion, garlic, ginger, and
chili and saute for two minutes. Add pork and
cook for two more minutes, breaking up pieces
until they turn white.
Add sugar and fish sauce and stir. Allow meat
mixture to cook for two minutes without stirring,
so juices cook down and meat begins to caramelize.
Stir again and leave for two more minutes. Repeat
until pork caramelized and fragrant.
Adjust seasoning with a little more sugar, fish
sauce, or chili to suite your taste.

over rice, rice noodles, or asian slaw with garnishes on the side.
