2 cups fresh BABY SPINACH
|

1 cup halved GRAPE TOMATOES
|

1/2 cup chopped ONION
|
|
2 Tbl. fresh diced GARLIC
|
|
1 cup HEAVY WHIPPING CREAM
|
|
1/3 cup fresh grated PARMESAN
|
|
2 Tbl. real BUTTER
|
|
2 Tbl. fresh chopped BASIL
|
|
|
|
1 1/2 teas. ITALIAN SEASONING
|
|
Coarse BLACK PEPPER - to taste
|
|
SALT - to taste.

Instructions |

IMPORTANT- Have all prep done before even
beginning to cook!
|

|
In butter, saute onion about 4 mins. Add Garlic
and saute another min. Add tomatoes, salt, pepper,
and Italian seasoning and saute another 3-5 mins.
|
|
|
Stir in cream, spinach, and basil. Stir often,
about 7-10 mins. until spinach is wilted and sauce
has reduced.
|
|
|
Stir in Parmesan, about 2 mins. Stir in shrimp
about 2 mins. or until heated thru. Remove from
heat, taste and adjust seasonings
|

Serve as-is for an appetizer, , or over pasta, rice, or toast.
