2, 15 oz. Cans Brooks Chili Hot Beans, not drained
1 large can mushrooms, pieces ad stems, drained
One packet Chilli-O Original chili mix
Cilantro, grated cheese or taco chips, optional, for topping
15 oz. can seasoned diced tomatoes, undrained
Instructions
Brown the meat, , drain. Set aside. In same pot, add tomato paste and
stir 1 to 2 minutes until golden brown. Stir in peppers, onion, garlic
and jalapeño. Cook until vegetables are soft, 7 to 10 minutes.
Stir in 3/4 of a packet of Chili-O and cook one minute. Add the tomatoes, mushrooms and
beans. Return meat to the pot. Chili may look very thick, but it will thin out as it cooks.
Reduce heat to medium and simmer for 30 minutes. Add more Chilli-O if not seasoned enough.
Sprinkle with cilantro, grated cheese or crushed nachos.
