In a large skillet, heat 1 T canola oil over
medium high heat for 1-2 minutes. Add shrimp and
season with salt & pepper to taste. Saute until
shrimp are opaque, about 2 minutes per side.
Transfer to a plate and set aside. Return
skillet to heat and add remaining 1 T canola oil.
Add vegetables andd saute 7-10 minutes. Season
with salt and pepper. While vegetables saute,
cook noodles according to package directions.
Add broth to a medium pan and bring just to a
simmer. To serve, divide noodles among bowls.
Top each equally with broth, shrimp and
vegetables. Top with basil, cilantro and lime
wedge if desired.
