14 oz cauliflower florets (or 2 frozen bags cooked)
2 lbs chicken breast, cut up
onion powder, garlic powder, salt, pepper
1 Tbsp olive oil
2 cups shredded mozzarella
SAUCE-
2 Tbsp butter
2 cloves garlic, minced
8 oz cream cheese, cut into cubes
1 cup chicken broth
1/2 cup milk
1 1/2 cups shredded parmesan cheese
1/8 tsp black pepper
1/8 tsp nutmeg
Instructions
Preheat oven to 350. Steam the cauliflower. Place cut cauliflower in a microwave safe bowl with 1 cup of water. Cover with a damp paper towel and microwave on high for approximately 3-5 minutes or until the cauliflower is fork tender. Don’t overcook! Drain the cauliflower pat dry with a paper towel. Set aside.
Sprinkle chicken with onion powder, garlic powder, salt, and pepper. In a skillet over medium high heat add your olive oil and the cubed chicken. Cook for approximately 10 minutes, or until chicken is cooked through. Set aside.
Make sauce in medium saucepan. Over medium heat add butter then minced garlic. Stir and cook slightly until garlic starts to soften.
Add the cubed cream cheese to the pan. Stir until it starts to melt. Add a little broth at a time and keep whisking. Continue adding milk and whisk until cream cheese is all melted and all of the milk has been incorporated. When the sauce is smooth, stir in the parmesan cheese as well as the pepper and nutmeg. Continue whisking until well combined. Set aside.
Prepare a 13×9 inch casserole dish by spraying it with non-stick spray then spread ½ cup of alfredo sauce on the bottom. Next add half of the cauliflower to the dish making a layer of it on the bottom. Top with half of the cooked chicken. Let the chicken fill in the spaces between the cauliflower to fill the dish. Pour ¾ cup of alfredo sauce over the cauliflower and chicken.
Sprinkle 1 cup of mozzarella on top.
Repeat steps using the remaining cauliflower and chicken to make a layer, followed by the remaining alfredo sauce, and topped with the last of the mozzarella cheese. Place in oven and bake for 25-30 minutes, or until the casserole is warmed through and the cheese is fully melted.
