     Italian Sausage and Squash Casserole

Ingredients
1 lb Italian sausage links, cut in rounds
olive oil
1 yellow onion, diced
salt and pepper
2 cloves garlic, minced
3 medium yelllow or zucchini squash, thinly sliced
1 jar spaghetti or marinara sauce
1/2 tsp dried oregano
1/4 tsp dried thyme
 
1/4 cup shredded parmesan cheese for garnish
basil for garnish

Instructions
Heat oven to 350. Cook sausage and set aside. Heat olive oil in a skillet and add squash and salt. Saute in batches so not to overcrowd skillet. Add garlic and onion when squash is nearly tender. Add sauce to skillet with oregano and thyme. Mix well and simmer for a minute. Pour into baking dish with sausage. Cover and bake 25 minutes. Let rest uncovered about 10 minutes. Garnish with cheese and basil.
Serving Suggestions
Serve with pasta if desired or alone.
