1 rounded 1/3 cup oil packed sun dried tomatoes, chopped
1 rounded 1/3 cup crumbled feta cheese
1/4 tsp kosher salt
1/4 tsp black pepper
Instructions
Bring broth to a boil in medium saucepan; stir in
orzo. Return liquid to boil. Cook orzo,
uncovered, stirring occasionally, until the
liquid is absorbed, about 10 minutes. Remove
saucepan from heat.
Season orzo with salt and pepper. Stir, add
tomatoes and feta into orzo, mixing until feta
slightly melts.
Serve hot but is also delicious eaten cold.
