1 cup shredded carrots

1/2 tsp kosher salt

1 lb pasta- cellentani shape

2 cups chicken broth

2 cups unsweetened almond milk

1/2 cup Franks red hot sauce

3 scallions
|

1 cup reduced fat cheddar cheese

3 oz reduced fat cream cheese
|
|
3 cups chicken breast, cooked and shredded or chopped
|

or 2 rotisserie chicken breasts

Instructions |
|
|
Add olive oil to pan, add onion and carrots. Season
with salt. Cook for 5-7 minutes on medium heat until
tender. Add garlic and cook another minute.
|

Add entire box of pasta, followed by the broth and
milk. Stir everything and bring to boil. Once boil,
cover pit and reduce heat to simmer.
|
|
|
Simmer covered 10-12 mins until pasta is cooked.
Stir in cheddar, cream cheese, and hot sauce. Chop
scallions and chicken breast to add.
