Season the chicken with salt and pepper. In a large
frying pan, warm the olive oil over medium heat.
Add 1/2 the garlic and all of the chicken. Cook until chicken
is lightly browned, approximately 4 minutes each
side. Remove to a warm serving platter.
Add some olive oil to the pan if needed and add
mushrooms and remaining garlic to the pan. Cook
mushrooms until tender. Add artichokes, wine,
lemon juice and butter. Bring to boil and return
chicken to pan, reduce to simmer for 5 minutes.
Ready to serve.
ALTERNATIVE- If you choose to use the canned
mushrooms the cooking time is reduced since you can
add the mushrooms at the same time as the artichokes
eliminating the time needed to cook the raw
mushrooms.
