1 (18 oz.) can vacuum packed sweet potatoes*, drained, mashed
2 tbsp. honey
4 (1/4-inch) slices lemon
1 tsp. Land O Lakes Sweet Cream Butter
Instructions
Heat oven to 350 degrees F.
In 2 quart saucepan melt 1/4 cup butter. Stir in flour, salt, cinnamon and pepper until smooth. Stir in milk. Cook, over med. heat, stirring constantly, just until mixture thickens (1 minute).
Stir in potatoes and honey until smooth. Spoon into ungreased 1 1/2.quart baking dish. Top with lemon slices; dot each lemon slice with 1/4 tsp. butter.
Bake, uncovered, for 35 to 45 minutes or until heated through
MICROWAVE DIRECTIONS:In 1 1/2 quart casserole melt butter on HIGH (50 to 60 seconds). Stir in flour, salt, cinnamon and pepper until smooth. Stir in milk. Cook on HIGH, uncovered, stirring every 30 seconds (1 to 1 1/2 minutes); stir well (sauce will thicken with stirring). Stir in potatoes and honey.
Cover; cook on HIGH, stirring after 1/2 the time, until potatoes are heated through (4 to 5 minutes). Stir; top with lemon slices. Dot each lemon slice with 1/4 tsp. butter. Cover; cook on HIGH 2 minutes. Let stand 1 minute.
