Flatten the chicken breasts so they're an even
thickness.
Season the chicken.
Heat the pan to medium-high heat. When it is quite
hot, add the olive oil. Swirl the pan so it is
lightly covered with oil.
Reduce heat to medium. Cook chicken for 1 minute
without moving.
Flip the chicken.
Turn the heat to low.
Cover the pan with a tight-fitting lid. Set a
timer for 10 min. Do not lift the lid. Do not
peek.
Turn off the heat, remove from stove, and let sit
for another 10 minutes. Still do not lift the lid.
After 10 minutes are done, then check with meat
thermometer. 165 degrees F is done.
