1. Heat the oil in a large skillet over medium heat.
2. Saute the onions until soft and caramelized -
about 25 minutes. Season with salt and pepper.
3. Move the onions to a plate.
4. Generously butter both sides of each piece of
bread.
5. Put the cheese and onions between the bread
slices.
6 Heat a large skillet or griddle to medium-low
heat.
7. Cook the sandwiches until golden brown - 2-3
minutes each side.
