1/2 cup confectioner's sugar, plus more for garnish
1/4 tsp. salt
Filling-
4 Lg eggs, plus 2 egg yolks
2 Cups granulated sugar
1/3 Cup All Purpose Flour, Sifted
1 tsp grated lemon zest
1 Cup fresh lemon juice from 6-8 lemons
Instructions
1. Make crust- Position rack in middle of oven &
preheat to 350 degrees F. Greese a 9 x 13 inch pan
w/oil (vegetable, canola, etc.) & line w/foil,
leaving a 2-inch overhang on all sides; Grease the
foil w/oil, too. Pulse butter, flour, both sugars
& sale in a food processor until dough comes
together, about 1 minute. Press evenly into bottom
& about 1/2 inch up the sides of the prepared pan,
making sure there are no cracks. Bake until crust
is golden, about 25 minutes
2. Make filling. Whisk the whole eggs & egg yolks,
sugar & flour in a bowl until smooth. Whisk in the
lemon zest & juice. Remove crust from the oven &
reduce oven temp to 300 degrees F. Pour filling
over warm crust & return to the oven. Bake til
filling is just set, 30-35 minutes.
3. Let bars cool in pan on a rack, then refrigerate
until firm, at least 2 hours. Lift out of the pan
using the foil & slice. Dust w/confectioners sugar
before serving.
4. Enjoy & be prepared for pucker lips!
