2 lbs top sirloin steak sliced into very thin 2 inch strips
1/2 tsp salt
5 Cups (12 oz) broccoli florets, chopped into size of your choice
Sauce
1 Cup low sodium beef broth
1/3 Cup packed light brown sugar
1/4 Cup oyster sauce
3 Tblsp cornstarch
2 Tblsp Japanese rice wine or dry sherry (I use sherry; it's easier to find in stores)
1 Tblsp toasted sesame oil
1 to 3 tsps Asian chili sauce
4 to 6 cloves garlic, minced (may sub 1 to 1 1/4 tsp garlic powder)
1 Tblsp freshly grated ginger (may sub 1 tsp gr. ginger)
1/2 tsp black pepper
1/2 tsp onion powder
Green onions, chopped, & sesame seeds for garnish
Instructions
1. Pat beef slices dry & toss with 1/2 tsp salt,
set aside;
2. Add all of sauce ingredients to the slow cooker
& whish til cornstarch dissolves. Add the beef &
stir to combine. Cover & coook on LOW for 3 to 4
hours, until meat is very tender.
3. Once beef is tender, add broccoli on top of
beef mixture, w/o stirring so the broccoli steam
cooks. Cook for 20 to 30 add'l minutes or until
broccoli reaches desired crisp tenderness.
4. If you prefer the sauce to be thicker, prior to
step 3, you can transfer the liquid from the crock
pot to a pan & simmer it until it reaches the
thickness you desire. This is because the
broccoli steaming process can thin out the sauce
in the crock pot. I didn't do this & enjoyed it
just fine.
Tips & Tricks-
1. Slice steak thinly. Placing steak in freezer
for 30 minutes before cutting makes this task
easier
2. Oyster Sauce substitute. If you're allergic to
shellfish, use Lee Kum Kee Vegetarian Stir-Fry
Sauce.
3. Use RICE WINE, not rice wine vinegar. Rice wine
is NOT rice vinegar so DO NOT switch them out.
The best substitute for rice wine is pale dry
sherry.
4. Use quality ingredients
5. Steamed broccoli. Instead of adding broccoli
directly to the crockpot, you can steam broccoli
in the microwave by filling a bowl w/water to
about 1/8 inch deep. Cover & microwave on high for
2 to 3 minutes or until broccoli is crisp tender.
6. Swap veggies. You can sub the broccoli w/other
fave veggies or you can use more than 1 veggie.
Most veggies, except carrots, will only need 20 to
30 minutes in the crockpot.
7. Simmering the sauce is optional (step 4 above).
8. Don't overcook broccoli. Take care not to over
cook the broccoli. It should be crisp-tender like
in a stir fry & not tender crisp.
9. Cook beef long enough. If the beef isn't super
tender, it just needs more cooking time. Even 30
minutes can make a huge difference, so be patient
& cook on!
10. Store leftovers in airtight container in the
fridge for up to 5 days.
