     Poppy Seed Cake (Through the Cooking Glass)

Ingredients
1/3 cup poppy seeds
2 sticks butter or margarine
4 eggs
1/2 tsp vanilla
1 tsp baking powder
2 tsp baking soda
1/2 tsp salt
1 cup buttermilk
1-1/2 cups sugar or 3/4 cup honey
 
grated rind of one orange
2-1/2 cups flour
1 tsp cinnamon combined with 2 Tblsp sugar

Instructions
Combine poppy seeds and buttermilk. Cover and refrigerate overnight. Cream sugar and butter. Beat in eggs one at a time. Add orange rind and vanilla. Sift together flour, salt, baking powder and baking soda. Alternately blend flour mixture and poppy seed mixture into sugar and butter.
Spoon half of the cake batter into greased and floured bundt or tube pan. Sprinkle cinnamon and sugar mixture over this. Add remaining batter. Bake at 350 degrees for one hour. Place on rack to cool for 10 minutes before removing from the pan. This cake travels well, is good for gifting and doesn't stay around long.
