Saute pancetta in olive oil. Add shallot and cook until softened. Add soy beans and sauté a few
minutes more. Add tomato paste, stir and saute another two minutes.
Meanwhile, cook pasta in salted boiling water. Occasionally add some pasta water to pasta
sauce. Once the pasta is cooked, add to sauce. Stir and simmer for a few minutes and transfer
to a serving dish.
Drizzle with premium olive oil, top with grated cheese and serve.
