3 lbs red potatoes
|
|
1/2 lb butter, softened
|
|
1 cup sour cream
|
|
1/2 cup cooked, chopped bacon
|
|
1/3 cup chives
|
|
1/2 cup grated parmesan cheese
|
|
2 cups shredded cheddar cheese
|
|
Salt and pepper to taste

Instructions |
|
|
Boil potatoes in lightly salted water until fork
tender. Drain water and place potatoes in mixing
bowl.
|

|
Add butter, sour cream, bacon, chives, and parmesan
cheese. Use potato masher to mash until everything
is combined and smooth.
|
|
|
Add salt and pepper to taste. Spoon potatoes into a
greased pan, top with cheddar cheese.
|
|
|
Back at 350 for 20-25 minutes or until cheese is
melted and just starting to brown.
