Wash, cook and cut up potatoes. Put in bowl. Add onions, parsley, and 3 tbsp. cidar vinager. Toss. In a skillet, cook sausage in olive oil til brown. Remove sausage. In pan drippings add mustard, garlic, peppers and remaining vinegar. Bring to boil stirring constantly. Pour over salad. Add sausage. Add mayo and sour cream to taste.
