     Carrot Cake

Ingredients
4 eggs
1 1/2 cup oil
2 cups sugar
2 cups flour
2 tsp baking powder
2 tsp soda
2 tsp cinnamon
1 tsp salt
1 tsp vanilla
 
3 cups carrots, grated fine
1/2 cup pecans
ICING
1 pkg powdered sugar
1/2 tsp salt
1 stick margarine
8 oz cream cheese
4 tsp lemon juice

Instructions
Mix all dry ingredients together. Add oil and vanilla. Mix well. Add eggs one at a time. Stir in grated carrots and nuts. Pour into 2 greased and floured cake pans. Bake 300 degrees 45 to 55 minutes.
Make frosting and frost cooled cake.
