12 large fresh mushrooms
|
|
2 tbsp margarine or butter
|
|
1 finely chopped onion
|
|
2 oz diced pepperoni
|
|
1 sm clove garlic - minced
|
|
1/2 cup Ritz crackers - crushed
|
|
2 tbsp Parmesan cheese
|
|
1 tbsp parsley
|
|
1/2 tsp seasoned salt
|
|
|
|
1/4 tsp organo
|
|
dash pepper
|
|
1/3 cup chicken broth
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
wash & dry mushrooms - remove stems, finely chop them and set aside
|
|
|
Melt margerine or butter, add onion, pepperoni, garlic and chopped stems. Cook til veggies are tender
|
|
|
Add crumbs, cheese, parsley, salt, oregano & pepper. Mix well, stir in chicken broth.
|
|
|
Spoon into mushroom caps, place in shallow pan wtih 1/4 inch water or white wine.
Bake uncovered at 325 degrees for 25 minutes or until heated through
