2 envelopes unflavored gelatin
½ c cold water
15 oz can crushed pineapple, undrained
1 c whipped topping
1/3 c mayonnaise
¼ c powdered sugar
1 c red maraschino cherries, chopped
½ c green maraschino cherries, chopped
½ c chopped pecans
Soften gelatin in cold water. Drain pineapple, add enough water to juice to make 1 cup. Bring juice to a boil and stir in gelatin. Chill until gelatin begins to thicken. Fold in whipped topping and remaining ingredients. Pour into a lightly oiled 4 cup mold. Chill until firm. Unmold and garnish with additional cherries, if desired.
