Mix yeast and 1/4 C warm water; let stand 5-10 minutes.
Cook oats in 1 C water according to directions. Remove from heat and stir in butter, brown sugar, honey, and salt. Cool for 5 minutes.
Add oats and flour to yeast and mix until dough starts to come away from sides. Turn onto lightly floured surface and knead until smooth and elastic (5 minutes). Place in well-greased bown; cover and let rise until doubled in size (1 hour).
Turn dough out and reshape; place on baking sheet and let rise 30-45 minutes. Bake at 375F for 30-45 minutes.
