2 Medium (1 cup) Stalks of Celery (coarsely chopped)
1 Medium (1/2 cup) Onion (chopped)
2 Cloves Garlic (finely chopped)
1 Cup of Chicken Broth
2 Tablespoons of Soy Sauce
1/2 Teaspoon of Gingerroot (finely chopped)
2 Tablespoons of Cornstarch
3 Tablespoons of Cold Water
1 Cup of Fresh Broccoli Florets
1 Cup of Fresh Snow Pea Pods
6 Cups of Chow Mein Noodles
Instructions
Remove any fat from chicken. Cut chicken into 1-inch pieces. In 10-inch skillet, heat oil over medium-high heat. Add chicken; cook about 5 minutes, turning once, until brown.
In 3 to 4-quart slow cooker, place carrots, celery, onion and garlic. Add chicken. Mix broth, soy sauce and ginerroot; pour over chicken.
Cover; cook on Low heat setting 6 to 8 hours.
In small bowl, mix cornstarch and water until smooth; stir into chicken mixture. Stir in broccoli and pea pods. Inrease heat setting to High; cover and cook 15 minutes. Serve over noodles.
*SUBSTITUTION: Use just snow pead pods instead of the combination of broccoli and pea pods. Or if you'd prefer; stir 1 cup sliced fresh mushrooms in with the broccoli.
