Classic Gazpacho (Cold Tomato Soup)

1 1/2 lbs. ripe tomatoes, peeled (drop in boiling water until skins "crack" and peel them easily).

1 small onion, chopped
|
|
1/2 medium cucumber, peeled, seeded, and chopped
|
|
1/2 small green pepper, seeded and chopped
|
|
1 clove garlic
|
|
4 Tbl. tarragon vinegar
|
|
2 Tbl. olive oil
|
|
1 1/2 C tomato juice (can use more)
|
|
salt and fresh ground pepper
|
|
|
|
diced green pepper, onion, tomato, and cucumber for garnish
|
|
crutons
|

Instructions |
|
|
Combine tomatoes, onion, cucumber, green pepper, and garlic in a food processor. Process until well blended. Add vinegar and oil and process briefly.

|
Transfer to a bowl. Stir in tomato juice and season with salt and pepper to taste. Serve cold with all garnishes.
