     Easy Chicken Tortilla Soup

Ingredients
2 cans (14.5 oz. each) diced tomatoes with green chiles
3 -4 cans chicken broth
1 1/2 pounds diced, cooked chicken (seasoned with 2 tsp chili powder)
Mahatma Beans & Rice packet
Shredded Monterey Jack Cheese
Tortilla Chips
 

Instructions
Combine undrained tomatoes and chicken broth in large sauce pan. Boil; add cooked chicken. Reduce heat; cook 7 minutes.
Add in prepared beans and rice; heat through.
Spoon into bowls. Top with cheese and tortilla chips.
Serving Suggestions
You can add more broth to make it go farther. The tortilla chips will soak up the extra broth. This recipe tastes better the second day.
