Saute: Garlic, onion, celery, and green pepper till tender. Mash tofu and add to pan with veggies, fry until some of the water has evaporated.
Add: Tomatoes and spices. Cook over Medium heat for 15 minutes, stir to prevent sticking and add water as needed.
Even better served with cornbread. Add more beans or corn if you like.
Here is a little side note she added about Tofu- Tofu can be mashed - cooked with onions, garlic and a little oil and used like hamburger in Tocos and other dishes.
Cut it in slices or cubes - dredge it with flour mixed with Italian spice and salt and fry in oil.
Can be frozen - thaw and squeeze out the water (will look like a sponge) and put into all kinds of dishes such as spaghetti sauce, etc.
To remove the water before use, lay on a dish towel or paper towels and press slightly. You can also put something heavy on top and let sit for a short time.
