Stir potatoes, sour cream, onion and 1 cup grated cheese, salt & pepper. Put in greased pan. Top with remaining cheese. Sprinkle with paprika. Cover and refrigerate 4 hours or overnight. Bake 30 minutes at 350.
When making multiple batches, stir during cooking. Put cheese and paprika on the last 15 minutes and finish baking uncovered. Adjust time as necessary.
