boil 4 or 5 large sweet potatoes (whole) for about an hour
Mash 3 or 4 cups of sweet potatoes with
1 cup brown sugar
1/2 tsp salt
2 eggs, beaten
1/2 stick butter or margarine
1/2 cup milk (can use evaporated milk)
1 tsp vanilla
TOPPING:
1 cup brown sugar
1/3 cup flour
1 cup pecans, chopped
1/3 stick butter
Instructions
Preheat oven to 350. Mash sweet potatoes with brown sugar, salt, eggs, butter, milk and vanilla. Place in a baking dish. Combine brown sugar, flour, pecans and butter for topping. Spread on top of sweet potatoes. Bake for 40 minutes.
