Combine soup, 1 cup cheese, 1/2 can fried onions and sour cream until blended. Add vegetables and stir until throughly combined.
Pour into baking dish. Bake at 350 for 30 minutes. Combine remaining cheese and onions. Sprinkle on top of mixture and return to oven for another 5 minutes or until cheese is melted and onions are browned.
