2 frozen chicken breast tenders, chopped into small pieces

1 carrot, chopped

1 celery rib, chopped

2 Tbsp. Craisins (sweetened, dried cranberries)

1 Tbsp. sliced almonds

1/2 tsp ginger
|
|
1/2 cup Minute Rice
|

2/3 cup water
|

1 tsp. cooking oil

Instructions |
|
|
Combine all ingredients except almonds in a microwave-safe bowl. Mix well.
|

Cover tightly with plastic wrap.
|
|
|
Microwave at 80% power for 5 minutes. Remove from microwave and let rest for 2 minutes.

Remove plastic wrap, add almonds and toss to combine. Serve.
