4 Chicken Breasts - Boiled & Chopped into Bite-Sized Pieces
Broth from the Chicken Breasts
1/2 Large Onion - Chopped
1 Small Can Green Chilis
1 Can Cream of Mushroom Soup
1 Can Cream of Chicken Soup
1 Small Jar Chopped Pimentos
1 Package Corn Tortillas
2 c Cheddar Cheese - Grated
Salt
Pepper
Instructions
Preheat oven to 350 degrees.
Saute the onion and green chilis in a skillet. Add both soups, pimentos, salt and pepper. Stir together and simmer until warm.
Spray large baking dish with nonstick cooking spray.
Layer 1/3 chicken, 1/3 soup mixture, quartered tortillas, then cheese. Repeat - ending with cheese on the top.
Cook covered for 55 minutes. Remove cover and cook for 5 minutes to melt the cheese on top of the casserole.
