1 bag (1 lb) frozen broccoli, carrots and cauliflower, thawed, drained
1 1/2 cups Cheddar cheese crackers, crushed
2 Tbsp butter or margarine, melted
Instructions
Heat oven to 375 degrees. Spray shallow 1 1/2 qt caserole or gratin dish with cooking spray. In large bowl, mix soup, cheese and sour cream. Stir in bell pepper and thawed vegetables. Spoon into casserole.
In small bowl, mix crushed crackers and butter. Sprinkle over vegetable mixture. Bake 30 to 35 minutes or until mixture is bubbly and vegetables are crisp tender.
